Let’s take a closer look at my five quick and easy to make dishes:
Cheesy Rice Mini Casseroles Made With Veetee Dine In Long Grain Rice
These mini casseroles took less than 5 minutes to make. I chopped some red onion, and tomatoes while the rice was in the microwave for 2 minutes. Once the rice was done, I mixed the rice, shredded cheese, the onion, and tomato in a bowl. I then divided the mixture into two ramekins, topped with a little more shredded cheese, and toasted in a convection over for 2 minutes.
Total prep time 5 minutes.
Tip: This cheesy rice casserole is delicious with some hot sauce on top.
Quick and Easy Black Bean and Rice Roll-Ups Made With Veetee Dine In Long Grain Rice
You can make yours with any ingredients you wish but I could not leave tomato, and avocado out of mine.
While the rice cooked in the microwave for 2 minutes I diced up some tomato, sliced some avocado, strained black beans from a can, and got the shredded Mexican cheese, cilantro, and salsa out of the fridge.
As soon as the rice was done I popped a large flour tortilla in the microwave for 30 seconds to get warm.
Then it was just a matter of putting all the wholesome ingredients on top of the tortilla rolling it up, and adding salsa on top.
Total prep time 4 minutes.
Tip: Using cilantro inside the roll-up is delicious and is also pretty as a plating garnish too.
Oven Roasted Chicken Leftovers with Carrots and Veetee Dine In Basmati Rice
Okay, this one would have taken longer if the chicken used was not already cooked.
The chicken was leftover from the previous night’s dinner but made for a quick dinner the next night with some veggies and Veetee rice.
Using leftovers not only cuts down on food waste but also saves our family money.
I love finding new ways to use our leftovers, since I usually cook way too much for one night’s dinner, and Veetee Dine In Rice came to the rescue.
I cooked the carrots on the stovetop which took me right to the 5 minute mark.
Total prep time 5 minutes.
Tip: Only cook your veggies until they are soft enough to bite into. Overcooking can waste valuable nutrients.
Simple Wholesome Steamed Veggies with Veetee Dine In Whole Grain Rice & Quinoa
This is about as basic, and wholesome as you can get when it comes to a great meal under 5 minutes.
I simply steamed some tomato, and broccoli in the stovetop, as the Veetee rice cooked for 2 minutes.
After plating, I drizzled with some balsamic vinegar and olive oil. It was scrumptious!
Total prep time 5 minutes.
Tip: Splurge a little when it comes to balsamic vinegar and olive oil. Better quality products make a huge difference in the flavor and your enjoyment of a meal.
Sweet Creamy Pineapple Rice Pudding with Strawberries and Roasted Marshmallows Made with Veetee Dine In Basmati Rice
This was my most creative of all the dishes I made with Veetee Dine In Rice.
I had a blast coming up with this “recipe” after looking at other examples of rice puddings online.
It was so simple to make it is unbelievable how yummy it was!
Even my husband who typically hates rice scarfed it up.
As the rice was cooking for 2 minutes I got all the other ingredients ready.
I did not measure anything but what I used was 1/4 can of pineapple juice, 1 tablespoon sugar, 1 tablespoon butter, about a 1/4 cup of half and half, canned strawberries, marshmallows.
It took more time to open the can of strawberries and toast the marshmallows than anything and that took all of a hot minute.
You may not like your marshmallows as toasted as I do mine, but I have always loved mine on the burnt side.
I found that the burnt flavor really complimented, and leveled out the sweetness of the rest of the dessert.
After you remove the rice from the microwave simply mix sugar, pineapple juice, half and half, and butter in a mixing bowl.
Then put into a serving dish. Top with strawberries, and garnish with the marshmallow toasted to your liking.
Total prep time, a mere 3 minutes.
Tip: You can adjust this recipe with more or less juice, sugar, and butter as you prefer. The more liquid you add the less creamy your pudding will be. Also, you can use fresh strawberries, but if you do use canned use a healthy variety such as one in a light syrup or fresh fruit juice.
