Around here, we like whole food. Sure I love making elaborate menu’s and cooking complex recipes now and then, when I have the time, but for the most part, we eat quite simply. This equates usually to quite healthy.
The other day we realized we really needed to get to the store, so cooking supplies were very limited. What we ended up having for dinner was not only good, but inspired our idea for our simple holiday meal gathering.
First I will show you what we had for dinner.

Add some sliced almonds on top of the asparagus, and a little shredded cheddar to the rice, and yum!
That is what we ended up having. However my husband and I were discussing over dinner how the kids being older have a lot of holiday plans already, and we are a very small family. So we wanted something very simple for our gathering on the Sunday after Thanksgiving.
What we decided was inspired by our rather simple dinner.
We are going to make a turkey casserole!
Basically we will take Jasmine rice as used above in the photo, chopped steamed asparagus, turkey which we will shred sort of like pulled pork, and a very little bit of shredded cheddar on top, with silvered almond. Of course we will have some sides like a big salad, and of course pie.
It may not seem like much but it will be stress free, and so delicious!
While I do at times miss large family gatherings, I also appreciate that the kids have a lot of other events to attend these days, and I am happy for them. And I am happy for me that I don’t have to slave over a stove all day preparing gobs of food, then doing dishes, unable to relax.
So today, for me, Happiness Is … a simple, delicious, healthy Thanksgiving idea, and I am thankful for it.
